Chocolate Raspberry Cookie Bar

Chocolate Raspberry Cookie Bar

We had some raspberries left over from making the raspberry tart, so I got creative. I made the dough before I really had a idea of what I was going to make. I had some chocolate syrup and raspberry jam so I just combined them all together.

These bars were AMAZING. I had no idea how it was all going to taste once baked, but it was good. The filling is soft and gooey and the cookie base adds a layer of sweetness. Its like a chocolate raspberry pie but in bar form.

The top was perfectly brown and crispy while the bars still kept a soft interior. The chocolate raspberry combination is so addicting.

These bars are versatile and can be used with any fruit you have. Just find a jam that correlates with the fruit.

I would definitely recommend serving these warm.

Ingredients:

1/2 C butter
3/4 C granulated sugar
1/2 C brown sugar
1 tsp vanilla
1 egg
1 1/4 C flour
1/2 tsp baking soda
1/4 tsp salt
1/3 C chocolate fudge sauce
1/3 C raspberry jam
1/2 C fresh raspberries

Directions:

Preheat the oven to 350. Line a 9x9 or 8x8 pan with aluminum foil and spray with non-stick spray.
1. Cream the butter and sugars together
2. Add in the egg and vanilla
3. Mix in the flour, baking soda, and salt
4. Take half of the dough and press it into the bottom of the pan and a little up the sides
5. Spread the jam and the hot fudge sauce over the bottom of the dough
6. Sprinkle the raspberries over the fudge and jam layers
7. Take the remaining dough in parts, flatten it, and layer it over the fresh raspberries. Make sure the dough completely covers the fruit. Seal the the top layer dough with the dough that is spread up the sides of the the pan.
8. Bake for 20-25 minutes or until the top is golden brown. Let cool, cut, and enjoy!

Golden Chocolate Oreo Blondie Cookie Bars

Golden Chocolate Oreo Blondie Cookie Bars

Three layers, one bar. I've heard of people making "slutty brownies" which consist of brownie batter, chocolate chip cookie dough, and traditional oreos. I decided to make the golden Oreo version of these. Since I had Golden Chocolate Creme Oreos, I though it would be fitting to make the cookie layer chocolate, to match the creme.

These bars combine the goodness of a blondie, chocolate cookie, and oreos all into one bite.

They're simple to put together. First you have to make your two doughs.

Spread the chocolate cookie layer at the bottom of the pan.

Layer the oreos across this batter.

Then you just spread the blondie batter over the Oreos.

Place some chopped Oreo pieces on top of the dough, just for decoration.. and to add some extra crunch.

All set and ready to go.

After 30 minutes in the oven, they came out golden brown.

I love how some of the Oreo creme melted into the blondie layer.

If you cut them up, you will see the three distinct layers. Some say these are better then actual chocolate brownies. The some being my roommates.

Since there are three layers to these bars, they will come out thick. When I say thick I mean 4 inches thick. These bars pack a punch.

Im still not sure if a blondie is considered a brownie without the chocolate or a giant cookie in bar form. Either way, the blondie layer will stay fudgy like traditional brownies, while the cookie layer will bake like well... a cookie.

Recipe:

Blondies layer:

1/2 C butter
1 C dark brown sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 C flour

Cookie layer:

1/2 C oil (or butter)
1/2 C brown sugar
1/4 C granulated sugar
1 egg
1 tsp vanilla extract
1 1/4 C flour
1/3 C cocoa powder
1/2 tsp baking soda
1/4 tsp salt

20 Golden Chocolate Creme Oreos

Directions:

Preheat Oven to 350. Spray a 9x9 pan with nonstick spray
1. Make the cookie layer- combine the oil, sugars, egg, and vanilla in a bowl.
2. Sift together the flour, cocoa, baking soda, and salt. Add this to the wet mixture.
3. Spread the cookie layer at the bottom of the pan. It should be thick. You will have to use a spoon to help spread the dough.
4. Layer a row of oreos across the cookie dough
5. Make the blondie batter- combine the butter, sugar, egg, and vanilla in a bowl.
6. Add in the flour, baking powder, baking soda, and salt to the wet mixture and combine.
7. Spread the blondie batter across the Oreos
8. With the remaining Oreos, chop them and press them into the blondie dough.
9. Bake for 30-35 minutes or until a knife inserted comes out clean.

Caramel Apple Oatmeal Blondies

Caramel Apple Oatmeal Blondies

It's a brownie, it's a cookie bar, no, it's a blondie. What is a blondie anyways? I'm not even quite sure. All I know is that it is good... and when stuff tastes good I like to eat it.

I personally love these. I still had extra caramel left over from when I made a batch of it, and it needed to be put to good use. This is what I came up with.

You can feel less guilty about eating these because they have apples and oatmeal in them. If you forget about the sugar and the caramel its almost like you're just eating breakfast... right?

The caramel makes them gooey, the oatmeal gives them texture, the apples and spices give them flavor, and the sugar makes them sweet. These things are as good as chocolate brownies or even better. Once you eat one it's really hard not to eat another. They're like a giant deep dish apple oatmeal cookie... but a little better because they're thicker and chewier.

I swear they're good. These were another creation taken to the doctors working urgent care that day. I think it is safe to say that they enjoyed them.
