Caramel Apple Oatmeal Blondies



It's a brownie, it's a cookie bar, no, it's a blondie. What is a blondie anyways? I'm not even quite sure. All I know is that it is good... and when stuff tastes good I like to eat it.




I personally love these. I still had extra caramel left over from when I made a batch of it, and it needed to be put to good use. This is what I came up with.



You can feel less guilty about eating these because they have apples and oatmeal in them. If you forget about the sugar and the caramel its almost like you're just eating breakfast... right? 




The caramel makes them gooey, the oatmeal gives them texture, the apples and spices give them flavor, and the sugar makes them sweet. These things are as good as chocolate brownies or even better. Once you eat one it's really hard not to eat another. They're like a giant deep dish apple oatmeal cookie... but a little better because they're thicker and chewier. 

I swear they're good. These were another creation taken to the doctors working urgent care that day. I think it is safe to say that they enjoyed them.








Ingredients
  • 1 C butter
  • 3/4 C sugar
  • 3/4 C brown sugar
  • 2 eggs
  • 1 1/4 C flour
  • 1 1/2 C oatmeal
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 Granny Smith apples, chopped and peeled (or other good baking apples)
  • 1 C caramel candies or bits 

Instructions
  1. Preheat oven to 350° and prepare 9×13. Line pan with foil and spray with nonstick spray
  2. 1.Mix butter and sugar and until creamy. 
  3. 2.Beat in eggs 
  4. 3.Add in flour, baking powder, cinnamon and nutmeg 
  5. 4. Add in the oatmeal
  6. 5.Stir in chopped apples until blended. Batter will be thick.
  7. 6. Pour batter into prepared pan and sprinkle caramel  over batter and press in slightly.
  8. 7. Bake for 45 minutes, or until lightly browned. Let cool before serving and slicing.
