S'mores Cookies


S'mores Cookies


These are my favorite cookie. If you are craving the taste of s'mores, but don't have a camp fire handy, these are the cookies to make. Theres a dessert place called IV drip right by my school. After having a s'mores cookie from there, I wanted to recreate them. But I wanted them to be better, the cookies from the store was really hard and I wanted the cookie to be softer. 


I've made these cookies twice. Both times they were amazing. The first time I used butter that was completely melted. This yielding the cookies seen below. I put broken up Hershey's bars in these cookies. 


The second time I used softened butter. This cookies did not spread as much.


Both times they turned out as chewy, soft cookies.


I didn't put Hershey's pieces in this batch. These cookies are perfect because they are not to sweet. The graham cracker crumbs give the cookie itself a nice texture. 


You have to watch these cookies closely when you bake them. They only back for 5 minutes before you take them out and push marshmallows into the top of them. Once they go back in the oven the marshmallows will expand then brown quickly. If you leave them in the oven for a second to long they will end up like the cookies on the left with brown marshmallows. 


Either way they taste great. The only thing it affects is the appearance. After the cookies come out of the oven the marshmallows will deflate. If they are too brown the marshmallow will almost completely disappear when it deflates.

If you accidentally leave the cookies in the oven for too long before you put in the marshmallows do not fret. I left the first batch in for a little too long so when I tried to push in the marshmallows they wouldn't stay. As long as the marshmallows are sitting on the cookie when they go back in the oven they will melt into place. 


These cookies are simple to make and bake very quickly. It is like eating a s'mores but without the mess. If you have extra marshmallows on hand and 10 minutes of free time, why not make them? 


Recipe:

1 1/2 C flour
1 C graham cracker crumbs
1 tsp baking soda
1 tsp salt
1/8 tsp cinnamon
1 C butter (softened)
3/4 C granulated sugar
3/4 C brown sugar
1 tsp vanilla extract
2 eggs
1 1/2 C mini chocolate chips
1 1/2 C mini marshmallows
2 Hershey bars, chopped

Directions:

Preheat oven to 350. Line a baking sheet with parchment paper or spray with non-stick spray. 
1. Beat together the butter, sugars, vanilla, and egg until creamy
2. Combine the flour, graham cracker crumbs, baking soda, salt, and cinnamon in a bowl. Add this to the wet ingredients. 
3. Fold in the chocolate chips. 
4. Drop by rounded tablespoon onto cookie sheet
5. Bake for 7 minutes then remove from oven, quickly push 3-4 mini marshmallows and a pieces of chopped Hershey's bar into the tops of each cookie. 
6. Return to the oven for another 2-3 minutes. 
7. Let cool on a wire rack
