Pumpkin Cheesecake Swirl Brownies

Pumpkin Cheesecake Swirled Brownies 


Its finally October which means its pumpkin season! This is one of my favorite pumpkin recipes because it blends chocolate and pumpkin together, my two favorite things.


These brownies are super rich and fudgy. The pumpkin cheesecake swirl compliments the brownies perfectly.


These brownies went fast in my house. Even non-pumpkin lovers loved them.

For the brownies:

1 C butter
2 C sugar
3 eggs
1 1/2 tsp vanilla
3/4 C cocoa powder
1 C flour
1/2 tsp baking powder
1/4 tsp salt

For the pumpkin:

3 ounces cream cheese
1 tablespoon butter
1/2 C sugar
1 egg
1 C canned pumpkin 
1 tsp vanilla
1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350. Line a 9x13 pan with foil and spray with nonstick spray. 
  2. Make the brownies, combine the butter sugar eggs and vanilla in one bowl and mix until smooth. Mix the dry ingredients in a separate bowl then combine them with the wet ingredients. 
  3. Pour the brownie batter into the lined pan. 
  4. Make the pumpkin batter. Beat the cream cheese, butter, and sugar together. Next add in the remaining ingredients and mix until smooth. 
  5. Pour the pumpkin batter over the brownie batter. Using a knife you can swirl the two batters together. 
  6. Bake for 30-40 minutes or until the middle of the brownies is set.

Nutella Brownies (gluten free)


Gluten Free Nutella Brownies


This is a great brownie recipe for all of those who are gluten free. Instead of flour, ground oatmeal is used.

These brownies are soft and gooey. I've made this recipe dozens of times and every time they come out perfect. 

Ingredients:

5.3 oz greek yogurt (one package) 
1/4 C milk
1 egg
1/4 tsp salt
1 tsp baking powder
1 C sugar
1/2 C cocoa powder
1/2 C oats 
1/2 C nutella 

Directions:

1. Preheat oven to 350. Line a 9x9 pan with aluminum foil and spray with non stick spray.
2. Place all of the ingredients (liquid first) in a blender except the nutella. Blend until smooth
3. Pour the batter into the baking dish. It should be liquidy and thin. 
4. Microwave the nutella to soften it and pour it over the batter. 
5. Bake for 20-25 minutes or until the edges pull away from the pan. 
6. Wait until the brownies are completely cool to cut and serve.

Smores Brownies


S'mores Brownies 


You definitely don't need a campfire to enjoy the taste of s'mores. These come together quickly and are delicious. 





Ingredients:

1 Box brownies mix
1 package graham crackers (Reserve some crushed pieces for topping the brownies)
3 Hershey's chocolate bars
1 bag of marshmallows

Directions:

1. Preheat oven to 350. Line a 9x13 pan with foil or parchment paper 
2. Make the brownie mix according to the directions on the box
3. Line the bottom of the 9x13 pan with graham crackers
4. Pour the brownie mix on top of the crackers. Bake for 20 minutes. 
5. Take the pan out of the oven and empty all of the marshmallow on top of the hot brownies. 
6. Sprinkle the chocolate bar pieces and graham cracker pieces on top of the marshmallows. 
7. Place back in the oven and bake for an addition 15 minutes. 
8. Once out of the oven feel free to sprinkle more graham cracker and chocolate pieces on top while the brownies are hot. Or simply let cool, cut, and eat.

Dr. Pepper Brownies

Dr. Pepper Brownies 


I've seen tons of recipes using soda. The majority of them used just a box of cake mix and a sprite. I wanted to try a recipe with soda, except I didn't have a can of sprite.. or cake mix. So Dr. Pepper brownies were born.


These brownies are moist and chocolatey with a hint of Cherry Dr. Pepper. They are almost cake like. The brownie itself is a lot less dense compared to my other brownie recipes.


To enhance the Dr. Pepper flavor, I made a glaze for the brownies. All it is, is Dr. Pepper and powdered sugar. I pricked the top layer of the cake when it was still hot. That way when I poured the warm glaze on, some of it was absorbed by the brownies.


The brownies taste best after you allow the glaze to cool and seep in. Similar to the same idea of a poke cake.

This recipe would also work out great with cupcakes. I will be making these again, but maybe experimenting with some different soda flavors. Cherry Coke cake anyone?



Ingredients:

1 C Diet Cherry Dr. Pepper
1/4 C butter
1 egg
1/4 C brown sugar
1/4 C granulated sugar
1/4 C cocoa powder
1 tsp cornstarch
1 1/2 C flour
1/2 tsp baking soda
1/8 tsp salt 

For the glaze: 1 C powdered sugar 1 tablespoon dr. pepper

Directions:

1. Preheat oven to 350. Line a 9x9 pan with tin foil. Then spray with a non-stick spray
2. Combine the butter, egg, and Dr. Pepper in a bowl. 
3. Add in the sugars. 
4. Add in the cocoa, cornstarch, baking soda, salt, and flour. Mix until combined
5. Pour the mixture into the greased pan and bake for 20-25 minutes or until done. 
6. Make the glaze while the brownies are cooking , combine the powdered sugar and the Dr. Pepper in a small bowl
7. When the Brownies it done prick the top with a knife multiple times (so the glaze will sink into the brownies) 
8. Pour the glaze over the brownies while the brownies are still warm. Let cool, then cut and enjoy!

Gluten Free Peanut Butter Swirled Brownies


Peanut Butter Brownies (Gluten Free)



When I think baking brownies, I don't normally think pull out the blender. Except in this case that is exactly what you need to do. These are the easiest brownies to make. Ever. You simple take all of the ingredients, put it in the blender, mix for about 60 seconds, and pour it into a pan. Thats it. No creaming sugar, or using separate bowls for dry and wet ingredients. And they're gluten free so no flour needed!


These were also the most fudgy brownies I have ever had. You would never imagine they are made with no flour and only 1/2 cup of rolled oats. These are scrumptious. I don't normally use that word, but I feel like it is a perfect description for these brownies. 


You can even see how dense, chocolatey, and moist these are just from the picture. They're also quite addicting. Don't except to be satisfied with just eating one of these, before you can stop yourself you will be reaching for another one. 


Since the batter is made in a blender, it is very liquidy. To create the peanut butter effect, you simply microwave peanut butter and swirl it over the top of the batter like so. A little bit of peanut butter will go a long way in this recipe. If you're really feeling into you spreads, you can even microwave some nutella and swirl it on top as well. 


The only downside to these brownies is you have to wait until they are completely cool before cutting. Because of how moist these brownies are the chocolate easily sticks to any knife if the brownies are not cool. I placed mine in the fridge for 30 minutes after baking. But, I guess if you don't care about perfectly cut brownies then dig right in and enjoy the chocolate peanut butter layers with a big ol scoop of ice cream. 

Since my mother is now on a self proclaimed gluten free diet, I won't hesitate to make these again in the future.

Ingredients

1/2 C peanut butter
1 container vanilla greek yogurt (5.3 oz)
1/4 C milk (skim, soy, almond, whatever your preference)
1 egg
1/4 tsp salt
1 tsp baking powder
1 C granulated sugar
1/2 C cocoa powder
3/4 C old-fashioned rolled oats

Directions:

Preheat oven to 350. Prepare a 8x8 pan by lining with foil and spraying with non-stick spray
1. Place all of the ingredients except for the peanut butter in a blender. Blend until smooth, scrappping down the sides as needed. 
2. Pour batter into prepared pan
3. Melt the peanut butter for 30 seconds in a microwave save bowl. Drizzle the peanut butter over the brownies and swirl with a knife to create a marble effect 
4. Bake for 25-30 minutes or until brownies pull away from the sides of the pan. Wait until cool to cut and serve.

Zucchini Brownies


Zucchini Brownies 



Me neighbor gave me a giant zucchini and 3 bags of chocolate chips. Obviously I had to turn it into some baked goods. I've made zucchini cookies before, which I loved. After making a batch of those, I still had a ton of shredded zucchini left. This was then turned into brownies


After biting into one of these brownies, you would  never know that they contain more then 2 cups of shredded zucchnini. They area also relatively healthy because only 1/2 cup of oil is used. These ended up being the most fudgy brownies I have ever had. They are light, moist, and chocolatey. 


At first I was skeptical of these. The batter seemed very dry, until the zucchini was added. When I gave these to some of my friends to try they were skeptical at first too... until they took a bite. It's almost impossible to tell that the main ingredient used is a vegetable. 


I'd say the zucchini was put to good use.


Ingredients:

1/2 C vegetable oil
1 1/2 C granulated sugar
2 C flour
1/4 C cocoa powder
2 1/8 C shredded zucchini
2 tsp vanilla extract
1 tsp salt
1 1/2 tsp baking soda
1 1/2 C chocolate chips 

Directions:

Preheat oven to 350. Grease a 8x8 baking pan.
1. Combine the sugar, oil, and flour. The mixture will be very dry and crumbly. 
2. Add in the zucchini, it will add a lot of moisture. Then the cocoa powder, vanila slat, and baking soda
3. Fold in the chocolate chios
4. Pour the batter into the 8x8 pan. I lined mine with foil. 
5. Bake for 23-28 minutes or until brownies are set. Let cool, cut, and enjoy!

Golden Chocolate Oreo Blondie Cookie Bars



Three layers, one bar. I've heard of people making "slutty brownies" which consist of brownie batter, chocolate chip cookie dough, and traditional oreos. I decided to make the golden Oreo version of these. Since I had Golden Chocolate Creme Oreos, I though it would be fitting to make the cookie layer chocolate, to match the creme.  


These bars combine the goodness of a blondie, chocolate cookie, and oreos all into one bite.


They're simple to put together. First you have to make your two doughs.


Spread the chocolate cookie layer at the bottom of the pan. 


Layer the oreos across this batter. 


Then you just spread the blondie batter over the Oreos. 


Place some chopped Oreo pieces on top of the dough, just for decoration.. and to add some extra crunch. 

All set and ready to go. 


After 30 minutes in the oven, they came out golden brown. 


I love how some of the Oreo creme melted into the blondie layer. 



If you cut them up, you will see the three distinct layers. Some say these are better then actual chocolate brownies. The some being my roommates.


Since there are three layers to these bars, they will come out thick. When I say thick I mean 4 inches thick. These bars pack a punch.

Im still not sure if a blondie is considered a brownie without the chocolate or a giant cookie in bar form. Either way, the blondie layer will stay fudgy like traditional brownies, while the cookie layer will bake like well... a cookie. 


Recipe:

Blondies layer:

1/2 C butter
1 C dark brown sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 C flour

Cookie layer:

1/2 C oil (or butter)
1/2 C brown sugar
1/4 C granulated sugar
1 egg
1 tsp vanilla extract
1 1/4 C flour
1/3 C cocoa powder
1/2 tsp baking soda
1/4 tsp salt

20 Golden Chocolate Creme Oreos

Directions:

Preheat Oven to 350. Spray a 9x9 pan with nonstick spray
1. Make the cookie layer- combine the oil, sugars, egg, and vanilla in a bowl.
2. Sift together the flour, cocoa, baking soda, and salt. Add this to the wet mixture.
3. Spread the cookie layer at the bottom of the pan. It should be thick. You will have to use a spoon to help spread the dough.
4. Layer a row of oreos across the cookie dough
5. Make the blondie batter- combine the butter, sugar, egg, and vanilla in a bowl. 
6. Add in the flour, baking powder, baking soda, and salt to the wet mixture and combine.
7. Spread the blondie batter across the Oreos
8. With the remaining Oreos, chop them and press them into the blondie dough. 
9. Bake for 30-35 minutes or until a knife inserted comes out clean.

Everything Brownies



Everything Brownies



Why are these called everything brownies? Well, because they are covered in every type of candy or chocolate we had. It is a brownie layer base; topped with hershey's bars, dark chocolate MnMs, peanut butter MnMs, and milky way bars, all covered in sweetened condensed milk. 


Before cutting this brownies, it is best to let them chill. The caramel top layer will be very difficult to cut unless it is cool. 


To make these, you first have to make and bake the brownie layer. After the brownie layer has cooked for about 10 minutes, it is taken out and layered with candy!



We started with a milky way layer, just because we had a bunch of fun sized milky way bars.


Then came the MnM layer. I love how much color it added. 


Then you simply pour the can of sweetened condensed milk over the candy.



And keep pouring...

It is fine if the sweetened condensed milk doesn't touch every piece of candy or ever corner.


Once its completely covered, it is returned to the oven until nice and browned.


After a quick 15 minutes, it is done. The sweetened condensed milk acts like a glue holding the top layer all together.

The milk also gets absorbed into the brownie layer. This makes it super fudgy. Even after a couple days after baking the brownies remained fudgy and dense.


You might as well cut these into huge brownies. These are one of those bars where you will try and take the smallest piece so you don't feel guilty later, but then you end up eating three more brownies. I figure, might as well save the time and make the brownies bigger.

Recipe:

For the brownies:

1/2 C vegetable oil (or butter)
1 C white sugar
1 tsp vanilla extract
2 eggs
1/2 C flour
1/3 C cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1/4 C chocolate chips 

For the toppings:

1 can sweetened condensed milk
1 C MnMs
7 fun sized milky ways
7 fun sized Hershey's bars 

Directions:

Preheat Oven to 350. Line a 9x9 pan with foil and spray with non stick spray. 
1. Mix together the oil, sugars, and vanilla
2. Beat in the eggs
3. Sift together the flour, cocoa, baking powder, and salt. Then combine the wet and dry ingredients. 
4. Fold in the chocolate chips. 
5. Pour into the greased, lined pan and bake for 12 minuets. 
6. After 12 minuetes take the brownies out and layer on the chopped candies and MnMs
7. Pour the sweetened condensed milk over the candy layer
8. Return to the oven for another 20 minutes or until the top layer is set. Basically if you wiggle the pan and the middle isn't set leave it in for another minute or two.
