Lace Cookies

Lace Cookies 


I love these cookies. They remind me of something from my childhood. Once I saw the recipe for these I knew I had to make them. Its a super thin crunchy oatmeal cookie slathered with chocolate. They are a very dainty cookie. They will break apart easily. 

You can eat the cookies plain, or sandwich them with chocolate. You can use dark, milk, or white chocolate. If you're feeling adventurous you can even use nutella or peanut butter.


If you like oatmeal cookies, I would highly recommend making these. I like these even better then chewy oatmeal cookies. 


These are perfect for any holiday season. We actually made these along with all our other christmas cookies.

Ingredients

1/2 C flour
1/2 C granulated sugar
1/2 tsp cinnamon
1/4 tsp baking powder
1/8 tsp salt
1/2 C old-fashioned oats
1/3 C butter (melted)
2 tbsp heavy cream
2 tbsp light corn syrup
1 tsp vanilla extract
2 ounces chocolate, melted 

Directions

Preheat oven to 375. Line baking sheets with parchment paper
1. Combine flour, sugar, cinnamon, baking powder, salt and oats. 
2. In a separate bowl combine the melted butter, cream, corn syrup, and vanilla. Mix until smooth 
3. Add the dry ingredients into the wet. 
4. Drop 3/4 of a teaspoon of batter onto a baking sheet. Try to make the drops of batter all the same size. Only put 12 cookies on a sheet because these will spread, a lot.
5. Bake for 8-10 minutes. Let the cookies cool for about 2 minutes before they are transferred. 
6. When ready to assemble, melt the chocolate either in a microwave in 30 second increments, on the stove, or according to the package. 
6. Find two cookies that are about the same size. Spread the melted chocolate on one side of the cookie then place the other cookie on top. 
Makes about 20 sandwich cookies
