Chocolate Chip Cookies Stuffed with Brownies
The most delicious experience ever. You've probably seen all the recipes that combine brownies and cookie dough, but none can compare to this. The brownie stays dense and fudgy in its nest inside a soft chocolate chip cookie.
Go bake this.
Recipe:
For the Brownies:
1/2 c butter
1 c white sugar
1 tsp vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 c cocoa powder
1/4 tsp baking powder
1/4 tsp salt
For the Cookies:
2 1/4 c flour
1 tsp baking soda
1/4 tsp salt
2 tsp cornstarch
3/4 c butter
1 c brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla extract
1 c chocolate chips
Directions:
Preheat oven to 350
1. Make the brownie batter. Combine flour, cocoa powder, baking powder, and salt in a large bowl.
2. Cream the butter and sugars together.
3. Once light and fluffy beat in the eggs and vanilla extract.
4. Slowly add the dry ingredients to the wet.
5. Bake for 20-30min
Brownie batter is made for a 9x9 pan
While the brownies are cooking make the cookie dough
1. Mix the flour, baking soda, salt, and cornstarch in a large bowl
2. Cream together the butter and sugars.
3.Once light and fluffy add in the eggs and vanilla extract.
4. Mix the dry ingredients in with the wet.
5. Fold in the chocolate chips
Chill the dough until the brownies finish cooking
Once the brownies are done, allow to cool and cut into 1in by 1in squares.
Assemble the cookies by taking a scoop of cookie dough and placing it above and below the brownie then seal the edges. You can add more or less cookie dough depending on how big you want your cookies to be. Its fine if some of the brownie is peeking out. Place the cookie on a parchment lined baking sheet. I placed 6 cookies per sheet to be on the safe side. With the mix of the cornstarch and chilling the dough, they should not spread too much.
Bake for 10-15min or until done at 350. This will vary depending on your oven. Then enjoy!
