Double Chocolate Cookie Stuffed with Peanut Butter Brownies

Who doesn't love chocolate cookies? 
After seeing and making chocolate chip cookies stuffed with brownies, a new creation came to mind. 
So we created a list of mixes and matches and intend to create them all, but for tonight we started with this one.

I've decided to call these 'BICS'... brownies in cookies.

Its simple and easy. 

Bake the brownies, let them cool, cut them up, wrap them up, and back in the oven they go...

Recipe:

For the Brownie:

1/2 c butter
1/2 c peanut butter
1 c sugar
1/4 c brown sugar
2 eggs
1 c flour
1 tsp baking powder 
1/4 tsp salt
1 tsp vanilla

For the Cookie: 

1 c butter
1 c brown sugar
3/4 c sugar
1 tsp vanilla
2 eggs
2 1/8 c flour
1/2 c cocoa powder
1 tsp baking soda
1/2 tsp salt
2 tsp cornstarch 
Optional: 1/2 c chocolate chips and 1/2 c peanut butter chips

Directions:

Preheat the oven to 350
1. Assemble the brownie. In a large bowl mix the flour, baking powder, and salt. Set aside. 
2. Cream the butter and sugars together in a bowl. 
3. Once light and fluffy add in the egg, peanut butter, and vanilla. 
4. Slowly add in the dry ingredients 
5. Bake for 20-30 min or until a knife inserted comes out clean. 
Makes about a dozen brownies. Bake in a 9x9 pan. 

While the brownies are baking assemble the cookie dough...

1. In a large bowl combine the flour, cocoa powder, baking soda, salt, and cornstarch. 
2. Cream the butter and the sugars together in another bowl. 
3. Once light and fluffy add in the eggs and vanilla extract. 
4. Slowly mix the dry ingredients with the wet
5. Fold in the chocolate chips 

Put the cookie dough in the fridge to firm up until the brownies are cool and cut up. 
Once the brownies are done, take a 1 in x 1 in brownie and place a scoop of cookie dough above and below it. Seal it up and place it on a parchment lined cookie sheet. Its fine if some of the brownie is peaking out. The cookies don't spread that much, but to be safe I only put 6 on a sheet. Bake at 350 for 8-15 min or until done. The baking time will vary based on your oven. 

If you want bigger cookies, simply cut your brownies into bigger pieces. If you want smaller cookies, cut your brownies into small pieces and use less cookie dough to cover it. 

The cornstarch and chilling the dough will keep the cookies from spreading so they should end up nice and puffy!
